We have developed a recipe revealing the true flavors and unique textures of Bordeaux cannelés.
Purists will find the authentic taste of rum and subtle vanilla, combined with a crunchy and caramelized texture on the outside, and tenderly soft on the inside. We also offer other versions: vanilla alcohol-free, vegan and sugar-free.
Our cannelés are cooked every day in real traditional copper molds produced in the surroundings of Bordeaux, and are made from selected organic or natural origins ingredients.
Our other pastries and specialties, also homemade, will delight the most discerning gourmets.
ORGANIC and Environment
Cassonade strongly aims at producing in an eco-friendly way.
All our pastries and drinks are made from certified organic ingredients (only Saint-James® rum-SAINT JAMES is a registered trademark of RHUMS MARTINIQUAIS SAINT JAMES RMSJ-, the sweetener for the cannelés without sucrose and a natural flavoring are not certified organic) and mainly grown and produced in France (except the vanilla and cane sugar).
We are also moving towards a zero waste approach. We offer green or copper-colored metal boxes with a drawing of Bordeaux city, handy and reusable. The packaging is ecological and limited to a minimum in its distribution.
Another action that is close to our hearts is limiting food waste. We work in partnership with our neighbor Peter Coffee and recover his organic citrus zests to make our Saint James and our madeleines. We have also had the idea of recycling our unsold products through the creation of an ultra gourmet spread with fluted vegetables: the Gavé Cannelé®.
Cassonade is a 100% Bordeaux brand! Their creators Damien and Lucas are crazy-passionate about pastry.
In 2011, they created Labo&Gato in Bordeaux, a true temple of French pastry which offers more than 16,000 references of specialized products and pastry workshops with chefs. Labo&Gato then extended to Toulouse and Marseille.
With this experience, they decided to create Cassonade in 2019. An atypical and cozy place, with a breathtaking view on the Grosse Cloche, offering beverage, pastries and the real Bordeaux cannelé. A well-kept recipe that Cassonade has been adjusting to achieve the Vanilla, Vegan and Sugar-free versions.

A gourmet menu of cold and hot drinks is available to you: traditional or vegan homemade hot chocolate, cappuccino, chai latte, teas with various flavors, organic fruit juice, homemade golden drink, etc.
